Every location looks and feels different and is a fully staffed with a knowledgeable crew of the badass baristas whose specialties are nearly endless creating a killer cappuccino, macchiato, or americano. As one of Denver’s oldest coffee roasters we get a bit nerdy when it comes to your morning cup. Leave the percolator at home and stop by to meet our wonderful community of coffee enthusiasts. Colfax and Syracuse

Our new headquarters is situated at corner of Colfax and Syracuse in the East Colfax neighborhood and with over 6000 square feet it functions as a retail location, office, cupping lab, and roastery. The store-front features floor to ceiling windows creating a bright and airy atmosphere. Concrete floors and counter are softened with natural wood and light-loving plants in about every corner of the store.  

The back half of the store has our offices, a cupping lab, and roasting facility. We use a San Franciscan 25 and San Franciscan 75 to roast sweet, well-balanced coffee that is sure to delight just about any palate.

We opened our busy and lively retail location at the corner of 6th Avenue and Washington Street in 2001. Over the years Pablo's has become a community focal point, a place for people from all walks of life to assemble for coffee, conversation and friendship. The warm exterior is filled with lots of light, plants, and knowledgeable baristas who love talking coffee.

Our Capitol Hill location opened in 2012 in a historic building. Once the Penn Garage, it serviced automobiles for over 70 years before it was renovated into lofts and retail stores. It's a bit smaller than our other locations, but has the same great service and beans that make Pablo's a true Denver favorite.
